5 | Sri Lankan Cooking Class – Market, Kitchen & Table

A Sri Lankan kitchen starts long before the stove. At the morning market your host shows you how she shops: tapping coconuts to hear which are full, choosing curry leaves by scent, picking dried goraka for sourness and a hard block of Maldive fish for depth. Back in her home kitchen the day turns hands-on – scraping coconut on a hiramanaya stool, squeezing it twice for thick and thin milk, tempering mustard seed and curry leaves in hot oil. Together you cook a full rice and curry spread in clay pots: dhal, a fish or young jackfruit curry, gotu kola mallung and pol sambol, finished with wattalappam, the jaggery and coconut custard the island inherited from its Malay community. Then everyone sits down and eats it – with your fingers, if you are brave.
